I've wanted to make a lime tart or key lime pie for so long! I don't know what the hold up was, I'm in love with all things lime (seriously), and this was fairly easy to make and really tasty! I found a recipe on the blog "Two Peas & Their Pod" that inspired my tart, you can find the original recipe here but I'm sharing my own adaptation today. My version, is gluten free, uses coconut instead of butter and has slightly less sugar. The coconut oil gives the crust a subtle coconut flavor that complements the lime really well. Adding whipping cream on top (or you could try meringue) balances out the all the flavors.
Ingredients for the Crust:
- 1 and 1/2 cups of gluten free all purpose flour
- 1/3 cup of powdered sugar
- 1/2 cup of coconut oil
- 1/4 tsp of salt
- 1 egg yolk
- 4 Tablespoons of cold water
Ingredients for the Filling:
- 1 can of sweetened condensed milk
- 3/4 cup of lime juice
- 2 tsps of lime zest
- 3 egg yolks
- pint of whipping cream
Directions:
For the crust, put all the dry ingredients in a bowl and sift together. Next add your coconut oil and cut in with a pastry cutter. Should start to come together. Whisk an egg yoke in a separate bowl then slowly add to the crust mixture. Dough should start coming together more, continue cutting in until well combined. (Dough should stick together if you squeeze it between your fingers.) Sprinkle 4 Tablespoons of cold water over top and form into a ball.
Oil or butter the removable bottom of your tart pan. (I used a small amount of coconut oil.) Press the dough across the bottom of the pan and up the sides. Now place in the freezer until finished making the filling.
Preheat the oven to 350 degrees. In a bowl whisk together the lime juice, sweet & condensed milk, lime zest and egg yolks until smooth. Remove the crust from the freezer and pour mixture into the tart. Bake for 30 minutes, crust should be light golden in color, filling should be set around edges but little loose in the center.
Cool tart to room temperature, then refrigerate a minimum of 2 hours. Before serving, whip the whipping cream and spread over the top. Garnish with lime slices if you desire.
