I don't know about you but cold weather puts me in a pie baking mood. Standing around a hot oven feels so nice and there is something so therapeutic about making pie crust for me. Pecan pie is Joe's favorite and it is perfect this time of year with a good cup of coffee or cup of tea. I've been using this recipe as long as I've been making pie, it's a family hand-me-down. It you're looking for a pecan pie recipe that's not staggeringly sweet, you've come to the right place! And face it, these mini pies are super cute!
Ingredients:
1/3 cup of butter
1/2 cup of firmly packed brown sugar
1 cup of corn syrup
1 tsp vanilla
3 eggs slightly beaten
1 cup chopped pecans
Extra pecans for garnish
Pie crust
Directions:
Preheat the oven to 450 degrees. First cream the butter really well, then gradually add the brown sugar and cream well. Blend in the corn syrup and vanilla. Blend in the eggs and then the chopped pecans. Pour into pie shell. Garnish the top with whole pecans if you like. Bake at 450 degrees for 10 minutes, reduce the temperature to 350 degrees and bake for 15 more minutes.
