This was an idea born out of necessity. Joe was home for the weekend, we were both hungry and didn't feel like going out. Somehow the idea of nachos for breakfast popped into my head, probably because I was trying to justify eating tortilla chips for breakfast. (Yeah, Juanita's tortilla chips are that good, you want them for breakfast, lunch, and dinner!) The rest of the ingredients were conviently on hand, and boom, there you have it, nachos for breakfast - with bacon to boot! And the results are in, we both loved it! He actually said it's possibly the best idea I've ever had! So I guess it's winner!
Ingredients:
- Tortilla Chips - my favorite is Juanitas.
- 1/2 can of Black Beans, rinsed and drained.
- 4 Strips of Bacon
- 4 Eggs
- 1 Green Onion
- Salt & Pepper to Taste
- Dash of Cumin
- Dash of Paprika
- Several sprigs of Cilantro, washed and roughly chopped.
- Salsa Fresca - either homemade or Rojos from Costco
- Hot Sauce of Choice - I prefer Tapatio or Chalula with Lime
- 1 Lime
Directions:
Place strips of bacon in a frying pan over medium heat and cook to desired crispiness (or lack thereof). When done set on plate covered with a paper towel to cool. While the bacon is cooking, add the 4 eggs, chopped green onion, salt and pepper, and cumin and paprika to a bowl and whisk until well mixed. After the bacon is done, remove most of grease from the pan, leave small amount to cook the eggs in (if you want that extra flavor!). Add egg mixture to the pan and scramble until cooked through but still soft.
Arrange a layer of tortilla chips on each plate. Cut lime in half, using one half, sprinkle lime juice over chips. Sprinkle hot sauce over chips as well. Layer 1/4 of the can of beans on each plate over the chips. Cut up strips of bacon and layer on top of beans. Next add a layer of scrambled eggs. Add a generous scoop of salsa fresca. Sprinkle cilantro over nachos. Top with a wedge of lime.
Would also be delicious with a side of guacamole or sliced avocados if you have any around! Enjoy. Serves 2.
