Renae and I had a blast making cake pops on Saturday! Truth be told, Renae did most of the work and I took most of the photos. We had an awesome time but the process proved more challenging than we expected. We thought we would post a few tips about what worked for us, to hopefully make it easier for someone else. After all, these desserts are super delicious and mega cute...totally worth all the hard work!
You will need:
- Box of cake, prepared.
- Frosting
- Two tubs of white chocolate candy dips.
- Lollipop sticks
- Sprinkles
Directions:
-Make cake according to directions. We used the same recipe for the cake that we posted earlier today.
-Crumble the cake into tiny pieces. The smaller the better!
-Add frosting little by little. We added it spoonful by spoonful until we had a nice consistency for forming small balls. For the entire box of cake, we used a little over a third of a container of pre-made cream cheese frosting. You want it to stick together well without becoming a mush.
-Arrange cake balls onto parchment lined baking sheet and freeze.
-Melt white chocolate as a coating for the cake pops. This is the hardest part!! After one failed attempt we looked online and found THIS tutorial which helped tremendously. The key is to use a glass container and melt VERY SLOWLY with your microwave set at 50% power, stirring for quite a while after each time you microwave. If the white chocolate gets above body temperature (check with your finger) it will burn and not work. We also added 1 1/2 Tablespoon of vegetable oil to the container of candy melts, stirring to coat before microwaving the first time.
-Take the cake balls out of the freezer and place lollipop sticks ¾ of the way in.
-Dip in chocolate while they are still cold. If your cake warms up, the balls will fall off the sticks while you are trying to cover with the melted chocolate. Adding a little oil makes the white chocolate more runny so the chocolate is not so thick. (The first few we made were HUGE!) Stick them in floral foam until they dry. Add sprinkles before the chocolate dries.
-Arrange in flower foam and sprinkle with gold sprinkles to make them pretty. Decorate as you wish, we used baker's twine to tie a nice little bow. We liked arranging them in a bouquet for the bridal shower.
